Each muffin comes in at about 4 grams of protein (depending on the non-dairy milk you use), making them a great snack or addition to your daily breakfast routine. This recipe makes blueberry pancake muffins, but you can switch up the add-ins and customize them as you please!

Substitutions

  • Maple Syrup – You could swap this out for agave nectar or honey, but I think the maple syrup lends itself more to the pancake muffins!

Recipe Tips

  • This is such an easy recipe to customize to your tastes or the season! Feel free to swap the blueberries out for some chocolate chips, bananas, strawberries, etc. You could even add some cacao powder and peppermint extract for a chocolate peppermint muffin.
  • If you’re looking to add even more protein to these muffins, pick a higher protein non-dairy milk.

Flourish Protein Pancake Muffins

If you haven't tried Flourish's plant based protein mix yet, you need to! You can use it for pancakes, or make these muffins for a snack or breakfast.

Ingredients
  

  • 2 cups Flourish's Plant-Based Protein Pancake & Waffle Mix (go to recipe notes for a link their website and a discount code)
  • 2 cups non-dairy milk
  • 1/3 cup maple syrup
  • 10 oz frozen blueberries

Instructions
 

  • Preheat your oven to 350℉. Line a muffin tin with cupcake liners or silicone baking cups.
  • In a medium mixing bowl, combine the Flourish mix, non-dairy milk, and maple syrup and whisk together.
  • Fold in the blueberries.
  • Portion out the mix into 12 muffins.
  • Bake for 30 – 35 minutes.
