Healthy Vegan Spinach Artichoke Dip Recipe

Vegan Spinach & Artichoke Dip

This crowd-pleasing dip will have you hitting repeat every time! It’s vegan, gluten free, and much healthier than the regular dip. However, it doesn’t sacrifice on taste. This a great holiday appetizer or game day recipe or really for any time you need an easy, yet sneakily healthier appetizer. Save yourself the stress of making a complicated appetizer to impress, and instead, make this much easier one that will still impress!

Ingredients

  • Raw Cashews
  • Gluten Free Firm Tofu
  • Lemon Juice
  • Garlic Cloves
  • Dijon Mustard
  • Dried Dill
  • Nutritional Yeast
  • Non-Dairy Milk
  • Canned & Quartered Artichoke Hearts
  • Baby Spinach
  • Gluten Free Tortilla Chips for Serving

Substitutions

  • Garlic Cloves – You can swap the cloves for minced garlic or garlic powder.
  • Dijon Mustard – This can be switched out with 2 tsp of gluten free white miso paste.
  • Baby Spinach – Instead of this, you can use frozen spinach, but make sure to defrost it ahead of time and remove any excess water.

Recipe Tips

  • You can sauté the spinach in a pan ahead of time to more easily stir it into the dip and to ensure it’s softened within the dip.
  • There are so many things you can serve this with – it doesn’t have to be with tortilla chips! This would also go well with celery or carrot sticks, or even with gluten free pita bread.

Vegan Spinach & Artichoke Dip

The perfect crowd-pleasing appetizer that will have everyone wanting more! Not to mention, it’s much healthier than your regular dip.

Ingredients
  

  • 1 cup raw cashews
  • 1 block gluten free firm tofu
  • 1 tbsp lemon juice
  • 2 garlic cloves (pressed)
  • 2 tbsp dijon mustard
  • 1 tsp dried dill
  • 1/4 cup nutritional yeast
  • 3 tbsp non-dairy milk
  • 14 oz can of quartered artichokes
  • 2 cups baby spinach
  • gluten free tortilla chips

Instructions
 

  • Preheat oven to 425℉. Grease an oven safe dish with extra virgin olive oil.
  • Combine cashews, tofu, lemon juice, garlic, dijon mustard, dried dill, nutritional yeast, and non-dairy milk in a high speed blender or food processor. Blend until smooth.
  • Transfer the mixture to a medium mixing bowl.
  • Drain the can of artichokes – add them to the mixture along with the spinach. Mix to combine.
  • Transfer the mixture to the oven safe dish.
  • Bake for 10 – 15 minutes or until browned on the top.
  • Serve warm with tortilla chips.
