You can certainly make this on the weekend and have it for a snack all week long. As a matter of fact, that’s what I did with this recipe! It contains 9 servings so there is plenty to have as a dessert after dinner or as a mid-afternoon protein boost.

Ingredients

Apples

  • Large Apples
  • Cinnamon
  • Maple Syrup

Crisp

  • Gluten Free Rolled Oats
  • Chickpea Flour
  • Sliced Almonds
  • Plant Based Protein Powder
  • Maple Syrup
  • Unrefined Virgin Coconut Oil
  • Creamy Natural Almond Butter

Substitutions

  • Almond Butter – Instead of almond butter, you could also use cashew butter. The key is picking a milder nut butter so it doesn’t take over the flavor of the crisp.
  • Sliced Almonds – You could also swap this out for a different nut such as walnut.

Recipe Tips

  • Feel free to add on to this recipe! You could also add raisins into the crisp mixture or even chopped dates. I debated adding diced and peeled sweet potato to the apples for an additional fall flavor but didn’t have the time – feel free to add this in yourself if you have it!
  • Use an unflavored plant based protein powder or pick a flavor that would go well with the apple crisp like vanilla.

Protein Apple Crisp

Because apple crisp is a must in the fall, but this one has a twist! Extra protein and much healthier than your average dessert.

Ingredients
  

Apples

  • 6 large apples
  • 1/2 tsp cinnamon
  • 3 1/2 tbsp maple syrup

Crisp

  • 2 cups gluten free rolled oats
  • 1/2 cup chickpea flour
  • 1/2 cup sliced almonds
  • 3/4 cup plant based protein powder
  • 6 tbsp maple syrup
  • 1 tbsp unrefined virgin coconut oil
  • 1/2 cup creamy natural almond butter

Instructions
 

  • Preheat the oven to 350℉.
  • Grease a 9×9” square pan with extra virgin olive oil.
  • Peel, core, and slice the apples. Add them to a small mixing bowl.
  • Add the cinnamon and maple syrup to the apples. Mix well.
  • Pour the apple mixture into the pan and ensure an even spread.
  • Make the crisp by combining all ingredients in a medium mixing bowl and combining with your hands.
  • Crumble the crisp over the apples.
  • Place in the oven and bake for 30 to 35 minutes or until crisp has browned.
  • Serve warm.
