- Canned Chickpeas

- Natural Creamy Peanut Butter
- No Sugar Added Jam



Toppings
There are so many toppings you can try for sweet potato toast – not just the three in this post! My ricotta spread recipe would go great with this toast. So would the zesty corn dip. Another option is a black bean and corn combo or whatever else sounds good to you!

Sweet Potato Toast – Three Ways
Ingredients
Sweet Potatoes
- 2 large sweet potatoes
- 2 tbsp extra virgin olive oil
Guacamole & Tomato
- guacamole
- grape tomatoes
Chickpea & Hummus
- canned chickpeas
- hummus
- 1 tbsp lemon juice
PB & J
- natural creamy peanut butter
- no sugar added jam
Instructions
- Preheat the oven to 400℉. Line a baking sheet with parchment paper or silicone baking mat.
- Cut the sweet potatoes in 1/4 -1/2” slices lengthwise.
- Set the slices on the baking sheet and drizzle with extra virgin olive oil.
- Chose which toast variation you like best, lightly toast the sweet potato in a toaster, and add your toppings!
