Peanut Butter Cookie Dough Dates

A sweet treat or snack that is vegan, gluten free, and refined sugar free (depending on the chocolate chips you use). These cookie dough dates can be dessert or a quick mid-afternoon pick-me-up on a busy day. They sneakily contain a dose of protein with the peanut butter and almond flour. This treat is super easy to make and is great for on-the-go or after dinner bites.

Meal Prep Friendly

These sweet bites only take five minutes to meal prep and they are easy to grab throughout the week. I store the cookie dough and dates separately and stuff two dates when I want them. These are a great supplement when you want something sweet after dinner but still on the healthier side. They’re also great to pack in a small tupperware or baggie and take on-the-go for after the gym, running errands, between classes, etc.

  • Small Mixing Bowl & Spoon
  • Cutting Board & Small Knife – To cut the dates when you’re ready to eat.
  • Measuring Cups & Spoons

Ingredients

  • Natural Creamy Peanut Butter
  • Maple Syrup
  • Super Fine Almond Flour
  • Vanilla Extract
  • Dairy Free/Gluten Free Chocolate Chips
  • Medjool Dates

Substitutions

  • Peanut Butter – Cashew or almond butter are also options.
  • Maple Syrup – Honey, if you’re not vegan, or agave nectar would also work with this.
  • Optional Add-Ins – Chopped walnuts, pumpkin seeds, cashew pieces, and pistachios.

Peanut Butter Cookie Dough Dates

A healthier sweet treat/snack that is super easy to make! Not to mention, the protein boost from the almond flour and peanut butter. This snack is vegan, gluten free, and quick!

Ingredients
  

  • 1/2 cup natural creamy peanut butter
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup + 2 tbsp super fine gluten free almond flour
  • 1/3 cup dairy free/gluten free chocolate chips
  • 12 oz pitted medjool dates

Instructions
 

  • Make the cookie dough by combining the peanut butter, maple syrup, vanilla extract, and almond flour in a small mixing bowl. Mix well.
  • Add the chocolate chips and fold them in.
  • Slice open two pitted dates, add a tbsp of cookie dough to each, and enjoy!
  • When not consuming, store cookie dough in an airtight container in the fridge.
