
This pasta salad is so easy to make – it’s perfect for your next summer meal prep or party. It is well balanced with protein from the chickpea pasta, veggies, and fats from the vegan feta. The longest part of this recipe is cooking the actual pasta! So, if you are short on time for meal prep or just not feeling a long meal prep or side dish recipe for your next party, this one is a great go to.
The Dressing
In this recipe, I use Windsong Bliss Luscious Lemon dressing and it is delicious! I would definitely recommend it. If you don’t consume honey though, another option is a simple lemon, olive oil, and garlic dressing. This can be done by combining 1/4 cup extra virgin olive oil with the juice of a freshly squeezed lemon and minced garlic from one clove. Either way, you won’t be disappointed!

- Cutting Board & Knife
- Large Pasta Pot
- Measuring Cups

Ingredients
- Gluten Free Chickpea Pasta
- Fresh Arugula
- Red Onion
- Vegan & Gluten Free Feta – I used the Violife brand.
- *Windsong Bliss Luscious Lemon Dressing – See the note above about dressings if you don’t eat honey.

Substitutions
- Gluten Free Chickpea Pasta – You can certainly use a regular gluten free pasta, but I like the added protein of chickpea pasta. You could also use a lentil pasta or other type of bean.
- Red Onion – Any other type of onion would work as well! You could also use one or two shallots instead.
- Arugula – I like the bitter flavor of arugula, but if you’re not a fan, you can use baby spinach instead.
- Vegan & Gluten Free Feta – You can also omit this or use regular feta if you still eat cheeses. Another option is vegan parmesan.

Lemon Arugula Pasta Salad
Ingredients
- 2 boxes gluten free chickpea pasta (17.6 oz)
- 2.5 oz arugula
- 1/2 red onion
- 3/4 block vegan/gluten free feta (6 oz)
- 1 cup windsong bliss luscious lemon dressing (If you’re vegan – swap this out for lemon juice and extra virgin olive oil with a clove of minced garlic)
Instructions
- Cook the pasta according to package directions. When done, drain and rinse under cold water.
- While the pasta is cooking, dice the red onion.
- Combine the cooked pasta, red onion, and arugula in a large bowl. Crumble the vegan feta on top. Mix in the dressing or *lemon/olive oil mixture.
