Vegetable Crunch Salad

I ate a vegetable crunch salad last week when I was out to eat, and liked it so much that I just had to make my own version at home! This salad is packed with healthy items and gets it crunch from raw veggies, sunflower seeds, and sliced almonds. This is a great light recipe for the spring or summer months and makes a large amount of salad – making it perfect to bring to your next get together or party. All of this, and it’s vegan, gluten free, and super easy to make!

Meal Prep Friendly

Due to the fact that this is such a large salad, it’s perfect for meal prep. Plus, it’s a quick recipe to make so you don’t have to spend hours on meal prepping. We had this salad for lunches one week after I prepped it and we served it on a bed a quinoa and with a topping of chickpeas and avocado slices. It was the perfect healthy, tasty, and fresh lunch. After you’ve made this, store it in an airtight container in the fridge to ensure premium freshness.

What Equipment Do I Need?

  • Large Mixing Bowl or Salad Bowl
  • Small Mixing Bowl
  • Wooden Spatula
  • Whisk
  • Measuring Cups/Spoons
  • Cutting Board & Knife

Ingredients

  • Broccoli
  • Cauliflower
  • Shredded Carrots
  • Raisins
  • Shelled Sunflower Seeds
  • Sliced Almonds
  • Maple Syrup
  • Dijon Mustard

Substitutions

  • Raisins – You could swap this out for no sugar added craisins or even fresh blueberries.
  • Sliced Almonds – Other nuts, such as cashews or walnuts would work as well.
  • Veggies – You’re welcome to swap out any of the veggies in this recipe although I think the broccoli and cauliflower will give you the best crunch. I’ve seen others add celery which you can certainly do – I just don’t like the taste of celery!
  • Maple Dijon Dressing – If you’d like to choose a different dressing, feel free.

Vegetable Crunch Salad

This salad is so easy to make! It only requires some chopping. It’s perfect to bring to a party or use as meal prep over a bed of quinoa. This salad is full of nutritious veggies and a zingy maple dijon dressing.

Ingredients
  

Salad

  • 1 head of cauliflower
  • 1 head of broccoli
  • 3 cups shredded carrots
  • 1 cup shelled sunflower seeds
  • 1 cup sliced almonds
  • 2 cups raisins

Dressing

  • 1 cup dijon mustard
  • 3/4 cup maple syrup

Instructions
 

  • Rinse and finely chop the broccoli and cauliflower. Transfer to a large mixing or salad bowl.
  • Top with the shredded carrots, raisins, sunflower seeds, and sliced almonds. Mix together.
  • Make the dressing by combining the dijon mustard and maple syrup in a small mixing bowl. Whisk together.
  • Pour the dressing over the salad and mix well.

Notes

If you’re having this recipe for lunch, I love to serve it over a bed of quinoa and top it with chickpeas and avocado slices.
