Vegetable Crunch Salad
This salad is so easy to make! It only requires some chopping. It’s perfect to bring to a party or use as meal prep over a bed of quinoa. This salad is full of nutritious veggies and a zingy maple dijon dressing.

Ingredients
Salad

head of cauliflower

head of broccoli

shredded carrots

cup
shelled sunflower seeds

cup
sliced almonds

raisins
Dressing

cup
dijon mustard
3/4
cup
maple syrup
Instructions
Rinse and finely chop the broccoli and cauliflower. Transfer to a large mixing or salad bowl.
Top with the shredded carrots, raisins, sunflower seeds, and sliced almonds. Mix together.
Make the dressing by combining the dijon mustard and maple syrup in a small mixing bowl. Whisk together.
Pour the dressing over the salad and mix well.
Notes
If you’re having this recipe for lunch, I love to serve it over a bed of quinoa and top it with chickpeas and avocado slices.
