Not only is this dip super easy to make, but it’s also delicious and nutritious! It is packed with protein from the edamame and is of course vegan and gluten free. This is so quick to make and it can function as a dip or a spread. With its bright colors and fresh flavors, this is perfect for spring or summer. It’s a great protein-packed snack to have on hand or perfect to bring to your next get together when you’re looking for something healthier without sacrificing taste.
What Does This Go Well With?
If you’re using this as more of a spread, it goes great on toast with some fresh greens and roasted chickpeas. If you’re using this as a dip, you can serve it with gluten free crackers, tortilla chips, veggie crudités, or even gluten free pita bread slices. This dip/spread goes well with almost anything!
Meal Prep
You can prep this dip on the weekend and consume it all week long as a healthy and protein-packed snack. However, you will want to make sure to store it in an air tight container in the fridge. Before serving, it may need a quick stir due to some liquid buildup.
