What have you been designated to bring to Easter this year? Or, better yet, are you the host and need even more recipe ideas? Here are some options for appetizers, brunch, or dessert! Keep in mind, we have plenty more recipes on our blog for any other recipe needs. These are just some of my favorites that work well for Easter!
Brunch Ideas
If you’re heading to or hosting a brunch this year, these three recipes are great for anyone with gluten allergies, dairy allergies, or are vegan or plant-based!
1. Carrot Cake Muffins

These muffins are so perfect for an Easter breakfast or brunch! They are super tasty and a sweet treat, but are actually refined sugar free, vegan, and gluten free. Even if you don’t have any dietary restrictions, these are a hit. Check out the recipe here.
2. Tofu Breakfast Casserole

Instead of making a quiche this year, try making this tofu breakfast casserole instead! The base is sliced potatoes, making it safe for those who are gluten free and the “egg” is made from tofu, making it safe for those who are vegan. Look for the recipe here.
Appetizer
The grazing table of appetizers is essential before the Easter feast! Check out our favorite one below.
1. Buffalo Chickpea Dip

We have plenty of appetizers on Nutritious by Gabby, including pizza rolls and buffalo hummus. All of them are vegan and gluten free, but this is by far my favorite! Even for those who are meat-lovers, they won’t miss the chicken. This recipe is a healthier copycat of its counterpart of buffalo chicken dip! Check out the recipe here.
Desserts
While the kiddos are eating candy from their egg hunts, the adults should have desserts to munch on too! Check out these healthier dessert options.
1. No-Bake Coconut Almond Cookies

This is my favorite sweet treat recipe on our site! These cookies are SO easy and don’t require any baking. They are sneakily much healthier than your average cookie, but your guests don’t need to know that! Interested in these? Here is the recipe!
2. Crispy Peanut Butter Cups

These crispy peanut butter cups are a recipe I made a while ago. Despite being an older recipe, they are still a great recipe! Similar to the coconut almond cookies, these are healthier than your average peanut butter cup. Plus, they have an added fun crunch from crispy rice cereal. Check them out here.
3. Raspberry Crumble Bars

These bars are another older recipe, but they are perfect for Easter with their bright colors! These are a great dessert for people who enjoy more fruity desserts instead of chocolatey ones. Just like everything on this list, these are vegan and gluten free, but with the added bonus of also being refined sugar free. Take a look at the recipe here.
