
I am definitely someone who grew up loving peanut butter cups, but of course, any store-bought kind typically has dairy in it. So, I decided to make my own healthier version that is vegan and gluten-free! These can also be refined sugar free depending on what brand of dairy free chocolate chips you choose to use.
Why I really love these though? The added crunch of the rice krispies! Crunch bars were another one of my favorites growing up, so I thought why not experiment by combining these two treats? Not a fan of peanut butter? Easily swap out peanut butter for smooth almond butter in this recipe.

Ingredients

The ingredients in this recipe are kept minimal with only five ingredients. Although there is few ingredients, there is no sacrifice on taste!
- Gluten Free Oats – If you have celiac like me, it‘s important to make sure to buy oats that are certified gluten free. Even then, some people still may not be able to handle oats, so please be mindful of what works best for your body.
- Peanut Butter – I always prefer to buy natural peanut butter, as in no salt or sugar added. You‘re welcome to buy any kind you like for this recipe, but just be aware of added ingredients if you‘re opting not to buy natural!
- Dairy Free Chocolate Chips – If you‘ve seen any of my other recipes with chocolate chips, you know I always opt to use the Enjoy Life Foods brand. Beyond their chocolate chips being really yummy, they are free of many of the major allergens, including being certified gluten free. If there is another brand you like, you can always use that one as well! Enjoy Life is my favorite due to being celiac friendly.
Substitutions

Due to the fact that there are so little ingredients in this recipe, there isn‘t much room for substitutions. However, I still listed a few ideas below:
- Peanut Butter – If you aren‘t a fan of peanut butter or are allergic, you can always opt for almond butter instead or a different type of nut butter. This will change the flavor of the cups, but if you aren‘t looking for a peanut flavor then this won‘t matter to you!
- Rice Krispies – You could swap these out for corn flakes. I‘ve never tried this myself, but I‘ve no doubt they would still be delicious!

Krispy Peanut Butter Cups
Ingredients
- 1 cup natural peanut butter
- 1/3 cup maple syrup
- 3/4 cup finely ground gluten free oats
- 1 1/2 cups dairy free chocolate chips
- 3/4 cup rice krispies
Instructions
- Finely grind up your oats using a food processor or blender until they are a flour-like consistency.
- Combine the peanut butter, maple syrup, and ground oats in a bowl. Stir together.
- Press the peanut butter mixture into a greased muffin tin or silicone baking cups.
- Melt the chocolate chips in the microwave by heating them up in intervals of 30 seconds. Stir after each interval.
- Once the chocolate chips have melted completely, stir in the rice krispies.
- Spoon the chocolate krispy mixture onto each peanut butter cup.
- Refrigerate for one hour before consuming. Keep stored in the refrigerator when not eating.
