Coconut Almond Energy Bites

These energy bites make the perfect mid-morning or afternoon snack! They are super easy to make and can be made in just ten minutes. These are great to have for pre or post workout fuel, on your way to class, or to carry you through the last few hours of work. Plus, when eating two in a serving, you’ll get slightly over 7 grams of protein for your snack! Make these as an addition to your weekly meal prep!

What Equipment Do I Need?

  • Microwave Safe Bowl
  • High Speed Blender or Food Processor
  • Mixing Bowl
  • Plate or Large Tupperware Container

Ingredients

  • Pitted Medjool Dates
  • Smooth Natural Almond Butter
  • Unsweetened Shredded Coconut
  • Almond Flour
  • Raw Sliced Almonds
  • Dairy and Gluten Free Mini Chocolate Chips – I used the Enjoy Life brand.

Substitutions

I don’t recommend any substitutions in this recipe, but if you try something and it tastes good, feel free to leave it in the comments! We’re always looking for new ideas.

Recipe Tips

  • If you keep your medjool dates in the fridge, take them out and leave them on the counter 30 minutes prior to making the bites. This will help to soften the dates before making the balls.
  • Make sure to check the dates for any bugs on the inside after ripping them in half. With dates being so sweet, it’s common for them to get some small bugs.

Coconut Almond Energy Bites

These tasty bites are the perfect snack – they’re easy to make and contain slightly over 7 grams of protein per 2 ball serving. They’re perfect for a meal prep too!

Ingredients
  

  • 14 pitted medjool dates
  • 1/2 cup smooth natural almond butter
  • 1/3 cup unsweetened shredded coconut
  • 1/2 cup almond flour
  • 1/3 cup sliced raw almonds
  • 1/3 cup dairy and gluten free mini chocolate chips

Instructions
 

  • Rip each date in half and add them to a microwave safe bowl. Make sure to check the dates for any bugs on the inside after ripping them in half. With dates being so sweet, it’s common for them to get some small bugs. Microwave them for 30 seconds to soften them up.
  • Add all ingredients to a high speed blender or food processor except for the chocolate chips.
  • Pulse until well mixed together – it’s okay if there are still some small date chunks.
  • Transfer to a mixing bowl and add the chocolate chips. Mix them in using your hands.
  • Roll the mix into 12 balls and store in the fridge when not consuming. Enjoy!
