Piña Colada Overnight Oats

I know what some of you may be thinking – “ANOTHER overnight oats recipe?!? This girl is obsessed!” Well, yes I am. If you’ve read any of my other posts on overnight oats, you’ll know I love them because they are packed with healthy foods to start your day off right and can be made the night before, freeing up your morning to focus on the day. If you’ve been looking for a new flavor, it’s time to try these piña colada oats! These are perfect for the upcoming spring and summer time season. Get ready to be transported to a tropical oasis!

A Note About Meal Prep

You can prep these overnight oats by having them ready for the next two days, but I wouldn’t prep them any further in advance than this. It’s not harmful to do so, but the banana in the oats will not hold up very well past that two day mark, so just keep this in mind. Otherwise, this recipe makes two servings so you can prepare it for the next two days or save one serving for a loved one. Whatever you choose to do, you’ll be ready to go for the morning hours!

What Equipment Do I Need?

Another reason I love overnight oats recipes is because they are so simple and require very little effort. The same goes for the equipment – what’s needed is minimal.

  • Basic measuring cups and spoons
  • Two jars or glasses to put the oats in

Ingredients

  • Banana
  • Gluten Free Rolled Oats
  • Flax Seed Meal
  • Unsweetened Shredded Coconut
  • Chia Seeds
  • Maple Syrup or Agave Nectar
  • Nuts of Your Choice – I used sliced almonds
  • Diced Pineapple – Either buy a whole pineapple and cut it yourself or buy it pre-diced. I wouldn’t recommend canned pineapple, as it typically has added sugars unless you can find a brand that doesn’t have this!
  • Pure Pineapple Juice – If you have a juicer, you can make it yourself or you can buy something that is purely pineapple juice and not from concentrate. I bought the Lakewood brand.
  • Coconut Milk – From a jug – not canned.

Substitutions

There isn’t much for substitutions for this recipe if you’re trying to keep the piña colada flavor. However, as mentioned in the recipe, you can choose between agave nectar or maple syrup and which type of nuts to add is up to you as well!

Piña Colada Overnight Oats

Jump into the spring and summer months with this tasty overnight oats recipe that will be sure to get you in the tropical mood! These oats are vegan, gluten free, and simple to prep the night before.

Servings 2 overnight oats

Ingredients
  

  • 1 banana
  • 1 cup gluten free rolled oats
  • 2 tbsp flax seed meal
  • 4 tbsp unsweetened shredded coconut
  • 2 tsp chia seeds
  • 2 tbsp maple syrup or agave nectar
  • 4 tbsp nuts (I used sliced almonds)
  • 1/2 cup diced pineapple
  • 4 tbsp pure pineapple juice
  • 1 1/2 cups coconut milk (Not canned, in a jug)

Instructions
 

  • Set out two glasses or mason jars.
  • Mash 1/2 the banana in each glass with a fork.
  • Add the remaining ingredients except for the coconut milk, splitting them evenly – 1/2 cup oats, 1 tbsp flax seed meal, 2 tbsp coconut, 1 tsp chia seeds, 1 tbsp maple syrup or agave nectar, 2 tbsp nuts, 1/4 cup diced pineappple, 2 tbsp pineapple juice.
  • Top each glass with 3/4 cup coconut milk. Stir each for at least 30 seconds. Cover and store in the fridge overnight.
