
Looking for a sweet, but healthier treat for this Valentine’s Day? Look no further! These almond butter truffles are delicious and satisfying, but lower on the refined sugars. They are plant based, gluten free, and super easy to make as well! Don’t be shy to grab one or two of these on this Valentine’s Day or any day.
What Equipment Do I Need?
Nothing beyond the very basics is needed for this recipe because it’s that simple! All you will need is a small mixing bowl to create the center of the truffles in and something to mix with, along with a small bowl to melt the chocolate in, and a plate to set the truffles on. That’s it! When I mean the very basics, I seriously mean it! Nothing complicated about this recipe.
Let’s Talk About Almond Butter
For this recipe, the best almond butter to use will be one that is creamy and with no oil separation. One that has too much oil will mess with the texture of your truffles. I used the Barney’s brand with no added sugar or salt for this. If you’re more of a peanut butter than almond butter fan, then you can certainly swap this out. However, the same rules apply for the peanut butter – pick one that is creamy and has no oil separation.

Ingredients
- Almond Butter – I prefer to use a brand with no added sugar or salt. This recipe will also work best if you select a smooth almond butter that isn’t super oily. In this case, I used the Barney’s brand.
- Maple Syrup
- Chickpea Flour
- Dairy Free/Gluten Free Chocolate Chips – I used the Enjoy Life brand since they are free of several major allergens.

Substitutions
- Almond Butter – As mentioned in the above sections, feel free to swap this out for peanut butter instead.
- Maple Syrup – Honey or agave nectar are also options.
- Chickpea Flour – You can try swapping this out for a different gluten free flour like almond or brown rice, but just know that this may change the amount of flour you need.

Almond Butter Truffles
Ingredients
- 1 cup no sugar or salt added almond butter (I used the Barney’s brand)
- 1/2 cup maple syrup
- 3/4 cup chickpea flour
- 1 1/2 cups dairy free/gluten free chocolate chips
Instructions
- Combine the almond butter, maple syrup, and chickpea flour in a small mixing bowl. Mix well.
- Roll mixture into 12 balls and place them on a plate. Freeze them for 10 minutes.
- While the balls are freezing, microwave the chocolate chips in 30 second intervals until they are completely melted, pausing to stir each time.
- Coat each truffle in melted chocolate and place them back on the plate.
- Refrigerate for 10 minutes to harden the chocolate before consuming. Store in the fridge when not consuming. Enjoy!
