Almond Butter Truffles

Looking for a healthier treat for Valentine’s Day or any day? Look no further! These truffles will satisfy your sweet tooth but cut back on the refined sugar and are plant based and gluten free. Not to mention, they are super easy to make.

Ingredients
  

  • 1 cup no sugar or salt added almond butter (I used the Barney’s brand)
  • 1/2 cup maple syrup
  • 3/4 cup chickpea flour
  • 1 1/2 cups dairy free/gluten free chocolate chips

Instructions
 

  • Combine the almond butter, maple syrup, and chickpea flour in a small mixing bowl. Mix well.
  • Roll mixture into 12 balls and place them on a plate. Freeze them for 10 minutes.
  • While the balls are freezing, microwave the chocolate chips in 30 second intervals until they are completely melted, pausing to stir each time.
  • Coat each truffle in melted chocolate and place them back on the plate.
  • Refrigerate for 10 minutes to harden the chocolate before consuming. Store in the fridge when not consuming. Enjoy!
