Easy Gluten-Free Buffalo Chickpea Burger

Buffalo Chickpea Burger

Buffalo sauce is probably one of my favorite sauces – I love a spicy meal! So, why not base a burger on buffalo sauce? This recipe is simple, plant-based, gluten free, and delicious. Each burger has about 12 grams of protein too. If you’re a fan of spicy meals, you’ll love this one!

What Can I Make as a Side With This?

Nothing is better than the classic burger and fries. So, make a side of french fries! I like to use my air fryer to make french fries and toss them in extra virgin olive oil, garlic powder, onion powder, and italian seasoning. If you’re doing french fries, make a side of maple (honey) mustard too! Combine some maple syrup with dijon mustard and you’ve got another yummy sauce for this meal. Other options for sides could be sweet potato fries or a side salad.

What Could I Top this Burger With?

As you can see from the photos, I topped them with some tomato slices and arugula. However, there are many things that would go well on this such as red onion, plant based cheese, avocado slices, or even banana peppers! If you’re looking for sauces to add on top, you can always drizzle them with some extra buffalo sauce, a spread of vegan mayo, or a topping of vegan blue cheese dressing.

What Equipment Do I Need to Make This?

As I mentioned, this recipe is really simple, which means there’s no crazy equipment needed! All you’ll need is a blender or food processor, medium mixing bowl, and a baking sheet. In this recipe, I baked the burgers, but you can always pan fry them instead. In which case, you would need a fry pan instead of a baking sheet.

Ingredients

  • Chickpeas
  • Shredded Carrots
  • Flax Seed Meal + Water – When combined and left to sit for 15 minutes, this mixture congeals and acts as a binder such as an egg would.
  • Cashews
  • Dairy Free/Gluten Free Buffalo Sauce – I used the Primal Kitchen brand for this. They are one of my favorite companies for sauces!
  • Chickpea Flour
  • Gluten Free Buns
  • Optional Toppings – Arugula, tomato, red onion, and any of the others I mentioned above!

Substitutions

  • Flax Seed Meal + Water – You can also try using egg replacers, such as the one from Bob’s Red Mill.
  • Cashews – Any other nut would also work well in this too.
  • Chickpea Flour – I would stick to chickpea flour as it blends well with the other chickpeas in the burger. However, you can try to swap this out for a different type of gluten free flour such as almond or oat, but this may change the amount you need.

Ingredients
  

  • 2 cans of chickpeas
  • 1/2 cup shredded carrots
  • 2 tbsp flax seed meal
  • 6 tbsp water
  • 1 cup cashews
  • 1/3 cup dairy free/gluten free buffalo sauce (I used the Primal Kitchen brand)
  • 1/2 cup chickpea flour
  • 6 gluten free buns

Optional Toppings

  • arugula
  • sliced red onion
  • slices of tomato

Instructions
 

  • Preheat the oven to 425℉ and grease a baking sheet with extra virgin olive oil or line with a silicone baking mat.
  • Combine the water and flax seed meal in a small bowl. Stir and set aside for 15 minutes.
  • In a blender or food processor, grind up the cashews until they are breadcrumb-sized.
  • Rinse and drain the cans of chickpeas.
  • Add the chickpeas and carrots to the blender or food processor along with the ground cashews. Blend until well mixed.
  • Spoon out your mix into a medium mixing bowl. Add the buffalo sauce and flax mixture and mix well.
  • Add in the chickpea flour and mix.
  • Shape your mixture into 6 patties, placing them on your baking sheet. Bake in the oven for 8-10 minutes on each side.
  • Enjoy with red onion slices, tomato slices, and arugula.
