Buffalo Chickpea Burgers
Buffalo sauce is probably one of my favorite sauces - I love a spicy meal! So, why not base a burger on buffalo sauce? This recipe is simple, plant-based, gluten free, and delicious. Each burger has about 12 grams of protein too. If you're a fan of spicy meals, you'll love this one!

- 2 cans of chickpeas
- 1/2 cup shredded carrots
- 2 tbsp flax seed meal
- 6 tbsp water
- 1 cup cashews
- 1/3 cup dairy free/gluten free buffalo sauce (I used the Primal Kitchen brand)
- 1/2 cup chickpea flour
- 6 gluten free buns
Optional Toppings
- arugula
- sliced red onion
- slices of tomato
Preheat the oven to 425℉ and grease a baking sheet with extra virgin olive oil or line with a silicone baking mat.
Combine the water and flax seed meal in a small bowl. Stir and set aside for 15 minutes.
In a blender or food processor, grind up the cashews until they are breadcrumb-sized.
Rinse and drain the cans of chickpeas.
Add the chickpeas and carrots to the blender or food processor along with the ground cashews. Blend until well mixed.
Spoon out your mix into a medium mixing bowl. Add the buffalo sauce and flax mixture and mix well.
Add in the chickpea flour and mix.
Shape your mixture into 6 patties, placing them on your baking sheet. Bake in the oven for 8-10 minutes on each side.
Enjoy with red onion slices, tomato slices, and arugula.
