Walnut Fudge Freezer Bites

Frozen can imply summer time, but I think these are great for any time of year, even the holidays! They are plant based, gluten free, and super easy to make. They’re perfect for whenever you want a small treat throughout the week. These bites can be made in five minutes before freezing – who doesn’t love a super quick dessert recipe?

What Equipment Do I Need?

First, you will need a small saucepan to melt the ingredients in. Second, you’ll want an 8×8 square pan and some tin foil for the freezing process. Lastly, you may need a can opener to open the coconut cream can.

Additional Add-Ins

As you can see, this recipe contains walnuts, but you’re welcome to swap this out for a different kind of nut. Additionally, you can add any other ingredients that may sound good to you! You can add a swirl of peanut or almond butter after you’ve transferred the mix to the pan. If you’re making these around the holidays you could add chunks of peppermint. You could even add gluten free pretzels or pumpkin seeds! The options for add-ins to these bites are endless.

Ingredients

These bites are made with just four ingredients!

  • Dairy Free/Gluten Free Chocolate Chips – I like to use the Enjoy Life brand.
  • Coconut Cream
  • Vanilla Extract
  • Chopped Walnuts or Other Chopped Nut

Substitutions

  • Dairy Free/Gluten Free Chocolate Chips – You’re welcome to vary the type of chocolate chip you use! You can always use white chocolate or dark chocolate chips instead.
  • Vanilla Extract – You could try this with peppermint or almond extract instead depending on the flavors you want.
  • Chopped Walnuts – As mentioned, feel free to use a different type of nut or add in extra items.

Frozen Walnut Fudge Bites

Ingredients
  

  • 10 oz gluten free/dairy free chocolate chips (I used the Enjoy Life brand)
  • 1 can coconut cream
  • 1 tsp vanilla extract
  • 1/3 cup chopped walnuts or other nuts

Instructions
 

  • Add all ingredients except nuts to a small saucepan on the stove. Set to medium heat.
  • Cook until ingredients have melted together, making sure to stir frequently.
  • Turn off the burner and stir in the nuts.
  • Pour mix into an 8×8 square pan lined with tin foil.
  • Optional – top with additional nuts or other add-ins.
  • Freeze for at least 2 hours. Remove tin foil and cut into bites. Store in the freezer when not consuming.
