5-Minute Dill Chickpea Wraps
These wraps are perfect for when you have no time to prep lunch or just can't be bothered! They are delicious and nutritious and great for when you're having a busy week.

Ingredients

15 oz can of chickpeas
1
tbsp
dijon mustard
1
tbsp
lemon juice
1/4
cup
hummus
3
tbsp
chopped dill pickles
1/2
tsp
dried dill
2
gluten free wraps
1
cup
baby spinach
1
cup
shredded purple cabbage
Instructions
Drain and rinse the can of chickpeas. Pour them into a small mixing bowl.
Mash the chickpeas with a fork or potato masher.
Add the dijon, hummus, lemon juice, pickles, and dill to the bowl and mix together.
Place 1/2 cup of spinach and 1/2 cup shredded purple cabbage on each of the wraps. Top with 1/2 of the chickpea mixture on each.
Fold in the sides of the wraps, then roll up from the bottom.
