Healthy Peanut Butter Cookies

These cookies are so easy to make and much healthier than your average cookie! They make the perfect snack or after dinner bite and contain about seven grams of protein each. Not to mention, they are a great grab-and-go snack! Throw them in a baggie or tupperware and you have a tasty snack for work, before or after the gym, or school. Make these on the weekend and you’ll have a delicious and healthier snack to grab throughout the week. Beat the mid-afternoon slump with these cookies!

These cookies should be added to your meal prep list for this Sunday! They are the perfect snack to make and have on hand for the week. Plus, as I’ve mentioned, they are super easy to make. We always need a protein-packed snack to combat the afternoon slump and these cookies are definitely it!

  • 13” by 9” Baking Sheet
  • Silicone Baking Mat or Parchment Paper
  • Small Mixing Bowl
  • Small Bowl
  • Something to Mix With
  • Fork

Ingredients

  • Flax Seed Meal
  • Water
  • Creamy Natural Peanut Butter
  • Maple Syrup
  • Almond Flour

Substitutions

  • Maple Syrup – You can try using agave or honey instead
  • Add-Ins – You could also add 1 tsp of vanilla extract or cinnamon to sweeten the cookies a bit more.

Recipe Tips

Since this is such a simple recipe with minimal ingredients, I don’t have much for tips on this one! As mentioned in the substitutions, you can add some vanilla extract or cinnamon to this recipe to put a little extra dose of sweetness in these cookies.

Healthy Peanut Butter Cookies

These are super easy to make and contain about 7 grams of protein each!

Ingredients
  

  • 1/4 cup flax seed meal
  • 1/2 cup water
  • 1 cup natural creamy peanut butter
  • 1/3 cup maple syrup
  • 1 cup almond flour

Instructions
 

  • Preheat the oven to 350℉. Line a baking sheet with parchment paper or a silicone baking mat.
  • Combine the flax seed meal and water in a small bowl and stir well. Set aside and let sit for 15 minutes.
  • Add the peanut butter and maple syrup to a small mixing bowl – mix well.
  • Add the flax seed mixture to the bowl and mix.
  • Add the almond flour to the bowl and mix in.
  • Roll the dough into 12 balls and place on the baking sheet.
  • Press the cookies down with a fork in a plus sign pattern.
  • Bake for 12 – 15 minutes.
  • Let cool and enjoy!
