
These dates are the perfect tasty appetizer or snack! They are so simple to make and are completely plant based and gluten free. They are vegan if you drizzle them with agave nectar instead of honey. I made these for a family gathering and even my cheese-loving family members enjoyed these. Who doesn’t love an easy and healthy snack or appetizer?

- High Speed Blender or Food Processor
- Measuring Cups and Spoons

Meal Prep?
You can meal prep these and have them as a snack throughout the week. However, I prefer these when they’re warm and fresh out of the oven. You can certainly eat them cold too. If you’re going to use these as a snack throughout the week, I would hold off on adding the pistachios and honey/agave nectar. Instead, warm the pre-cooked dates in the microwave when ready to eat, then, add the pistachios and honey.
Ingredients
- Raw Cashews
- Gluten Free Extra Firm Tofu
- Garlic Clove
- Dijon Mustard
- Lemon Juice
- Gluten Free Nutritional Yeast
- Sea Salt
- Non-Dairy Milk
- Pitted Medjool Dates
- Crushed and Shelled Pistachios
- Honey or Agave Nectar

Substitutions
- Garlic Clove – You can swap this out for minced garlic or garlic powder.
- Pistachios – You could also try this with crushed walnuts.

- This recipe is best when dates are warm and fresh out of the oven.
- The easiest way to crush pistachios is to grind them up in the food processor or blender.

Vegan “Cheese” Stuffed Dates
Ingredients
Vegan "Cheese"
- 1/2 cup raw cashews
- 1/4 block gluten free extra firm tofu (94.5 grams)
- 1 tbsp dijon mustard
- 1 pressed garlic clove
- 1/2 tbsp lemon juice
- 1 1/2 tbsp nutritional yeast
- 1/4 tsp sea salt
- 1 tbsp non-dairy milk
Dates
- 20 pitted medjool dates
- 1/4 cup crushed/shelled pistachios
- drizzle of honey or agave nectar
Instructions
- Preheat the oven to 350℉. Prepare a square pan with parchment paper or a silicone baking mat.
- Combine all of the vegan cheese ingredients in a blender or food processor and blend until creamy.
- Slice open each date and stuff with the vegan cheese. Place them on the pan.
- Bake them for 6-9 minutes, or until cheese is browned.
- Top each stuffed date with crushed pistachios and a drizzle of honey or agave nectar.
- Serve warm.
