
We may be heading back to school but the warm weather isn’t over yet! Get in one last delicious summer-time mocktail before the season fades away. This mocktail is exactly as it sounds – refreshing! Make this for you and a friend or multiply the recipe to make a batch for your Labor Day weekend plans.
What Equipment Do I Need?
- Cutting Board & Knife
- Peeler
- Cocktail Shaker
- Muddler

Ingredients
- Peeled & Diced Cucumber
- Mint
- Lime Juice
- Agave Nectar
- Sparkling Water

Substitutions
- Lime Juice – Squeezing some fresh lime works just as well!
- Agave Nectar – You can also use maple syrup or make a honey simple syrup by combining honey and water 1:1 on the stovetop and setting to low heat for 5 to 10 minutes, stirring throughout.
- Sparkling Water – Soda water would be fine as well. If you’d like even more flavor, you can also use tonic water.

Cucumber Mint Refresher
A refreshing mocktail to celebrate the end of summer! Perfect for Labor Day weekend or whenever it suits you!
Ingredients
- 1/4 cup peeled and diced cucumber
- 10 mint leaves (plus extra for garnish)
- 1 1/2 oz lime juice
- 1/2 oz agave nectar
- sparkling water to top
Instructions
- Add the cucumber, mint leaves, lime juice, and agave nectar to a cocktail shaker. Muddle the ingredients until cucumber is well mushed.
- Add ice and shake for 20 seconds.
- Strain into two glasses. Add ice to each glass.
- Top each glass with sparkling water and a garnish of mint.
