Refreshing Cucumber Mint Mocktail Recipe

Cucumber Mint Refresher

We may be heading back to school but the warm weather isn’t over yet! Get in one last delicious summer-time mocktail before the season fades away. This mocktail is exactly as it sounds – refreshing! Make this for you and a friend or multiply the recipe to make a batch for your Labor Day weekend plans.

What Equipment Do I Need?

  • Cutting Board & Knife
  • Peeler
  • Cocktail Shaker
  • Muddler

Ingredients

  • Peeled & Diced Cucumber
  • Mint
  • Lime Juice
  • Agave Nectar
  • Sparkling Water

Substitutions

  • Lime Juice – Squeezing some fresh lime works just as well!
  • Agave Nectar – You can also use maple syrup or make a honey simple syrup by combining honey and water 1:1 on the stovetop and setting to low heat for 5 to 10 minutes, stirring throughout.
  • Sparkling Water – Soda water would be fine as well. If you’d like even more flavor, you can also use tonic water.

Cucumber Mint Refresher

A refreshing mocktail to celebrate the end of summer! Perfect for Labor Day weekend or whenever it suits you!
Prep Time 5 minutes
Course Drinks, mocktails
Servings 2 drinks

Ingredients
  

  • 1/4 cup peeled and diced cucumber
  • 10 mint leaves (plus extra for garnish)
  • 1 1/2 oz lime juice
  • 1/2 oz agave nectar
  • sparkling water to top

Instructions
 

  • Add the cucumber, mint leaves, lime juice, and agave nectar to a cocktail shaker. Muddle the ingredients until cucumber is well mushed.
  • Add ice and shake for 20 seconds.
  • Strain into two glasses. Add ice to each glass.
  • Top each glass with sparkling water and a garnish of mint.
