Easy Gluten Free Peanut Butter & Jelly Granola Cups

Gluten Free Granola Cups

Another great snack to meal prep and eat throughout the week coming at you! If you grew up on peanut butter and jelly sandwiches as a kid like I did, then these will definitely be a snack to bookmark. They are gluten free, vegan, and so crispy and crunchy. Not only this, but they are super portable as well! Stick them in a baggy and take them to work, the gym, class, wherever you need. It’s time to make this tasty and easy snack!

Meal Prep Friendly

My one complaint about these? I wish I made more of them! As I mentioned, these are the perfect grab-and-go snack so you’ll definitely want these prepped and on stand by for when you need them. I would even recommend doubling the recipe so you have plenty on hand. Grab two to go and eat them anywhere!

What Equipment Do I Need?

  • Mixing Bowl – For creating the granola mixture in.
  • Wooden Spatula or Spoon – For stirring the granola.
  • 2 12-cup Muffin Tins – For baking the granola cups in.
  • Silicone Baking Cups or Muffin/Cupcake Liners – Definitely don’t skip this equipment! If you don’t use some sort of liner on these, the jam may stick to the sides of the tin and make it challenging to remove the cups. In other words, you’ll end up with a bunch of broken granola cups instead of whole ones.

Ingredients

  • Gluten Free Oat Flour – Take gluten free rolled oats and put them in a blender or food processor. Pulse until the oats break into a flour.
  • Gluten Free Rolled Oats
  • Flax Seed Meal
  • Natural Creamy Peanut Butter – I used the Teddie’s brand.
  • Maple Syrup
  • Extra Virgin Olive Oil
  • No Sugar Added Jam – I used the Crofter’s brand. Any flavor of jam is great in this recipe.

Substitutions

  • Gluten Free Oat Flour – You’re welcome to try using almond flour instead. I haven’t tried this myself, but based upon the textures of the two flours, I think it would work out okay.
  • Peanut Butter – You can use any type of nut butter that’d you prefer.
  • Maple Syrup – Honey and agave nectar are options as well.

Recipe

Peanut Butter & Jelly Granola Cups

These are a deliciously crispy treat which are perfect for a snack. They are vegan, gluten free, meal-prep friendly, and super portable!

Servings 15 granola cups

Ingredients
  

  • 1 cup gluten free oat flour (I just finely ground gluten free rolled oats in my blender)
  • 2 cups gluten free rolled oats
  • 1/2 cup flax seed meal
  • 1 cup creamy natural peanut butter
  • 1/2 cup maple syrup
  • 1/4 cup extra virgin olive oil
  • 7 1/2 tbsp no sugar added jam

Instructions
 

  • Preheat the oven to 325℉. Line a muffin tin (plus three more cups if you’re using a 12-cup tin) with silicone baking cups or cupcake liners.
  • Combine the oat flour, rolled oats, flax seed meal, peanut butter, maple syrup, and olive oil in a medium mixing bowl. Mix well.
  • Press granola mix into cups about 1/2 way filled.
  • Add 1/2 tbsp of jam on top of each partially filled granola cup.
  • Top each cup with remaining granola.
  • Bake in the oven for 30 – 40 minutes or until browned and crispy.
  • Let cool, then enjoy! Store in an air tight container when not consuming.
