This is the PERFECT mocktail for the holiday season and would be a crowd-pleaser for any event. It is plant-based, gluten free and oh so festive! The garnish of rosemary and pomegranate seeds will really get you in the holiday mood!
What the Heck is Aquafaba?
Trust me, I didn‘t originally know what it was either! Aquafaba is the liquid that chickpeas were cooked in. In other words, use the liquid from a can of chickpeas in this recipe. Aquafaba is a great plant-based swap for egg whites and is what creates the fun foam on top of this mocktail.
If I Do Want Alcohol, What Should I Use?
I would say vodka or gin would go best in this cocktail, but if there’s a different type of alcohol you’d prefer, you can certainly try it and see how it tastes. You can add 1 1/2 to 2 ounces of alcohol to make this into a cocktail. All other elements of this recipe would stay the same.
What Equipment Do I Need?
As always, we like to keep it simple when we can! So, all you‘ll need to make this mocktail are a can opener to get your aquafaba from a can of chickpeas and a cocktail shaker.

Ingredients
- Pomegranate Juice
- Lime Juice
- Maple Syrup
- Aquafaba
- Ginger Beer
- Pomegranate Seeds
- Rosemary Sprigs

Substitutions
- Lime Juice – If you would prefer to use the juice of a lime instead of lime juice, go for it!
- Maple Syrup – If you aren’t vegan, you could switch this out for a honey simple syrup instead. Another option would be to use agave nectar.
- Ginger Beer – I’ve also made this recipe with sparkling water and it’s a great alternative if you don’t like the taste of ginger beer.

Holiday Spirit Mocktail
Ingredients
- 2 oz pomegranate juice
- 1/2 oz lime juice
- 1/2 oz maple syrup
- 1/2 oz aquafaba (liquid from a can of chickpeas)
- 1 1/2 – 2 oz ginger beer
Garnishes
- pomegranate seeds
- rosemary sprig
Instructions
- Add all ingredients (except for ginger beer) to a cocktail shaker without ice.
- Shake for 15 seconds.
- Add ice to the shaker.
- Shake for another 30 seconds.
- Pour into a glass with ice.
- Top with ginger beer.
- Add garnishes: pomegranate seeds and a sprig of rosemary.
