
These savory and spicy noodles are an easy dinner or a great meal prep for lunch. They are plant-based, gluten free, and super flavorful! They can even be made in less than 30 minutes. Give these chili garlic noodles a try!

If you’re a meal-prep fiend like me, these are the perfect noodles for you! One recipe creates 4-5 servings. If you’re prepping for more than just yourself, feel free to double the recipe. You can make these noodles on a weekend and enjoy them for lunch all week long. Chili garlic noodles for the win!
I Want to Make This! What Equipment Do I Need?
You’ll need a few basic items to create this recipe. First, you’ll want a large pasta pot to cook the noodles in and a fry pan for cooking the mushrooms. Next, you’ll want a baking sheet to cook the chickpeas on and a can opener to open your cans of chickpeas. You will also need a strainer to strain the noodles. Lastly, this one is optional, silicone baking liners to use on your baking sheet so the chickpeas don’t stick. This is optional because you can always use parchment paper or grease the pan, but baking liners are more environmentally friendly! If you’re interested, these are similar to the ones that I have (I don’t know where mine are from – they were a gift).

- Gluten Free Capellini – I used the Jovial brand!
- Broccoli Florets
- Shiitake Mushrooms
- Shredded Carrots
Roasted Chickpeas
- Chickpeas
- Extra Virgin Olive Oil
- Chili Powder
- Garlic Powder
- Onion Powder
Chili Garlic Sauce
- Sambal Oelek – This is what gives it the chili spice!
- Rice Vinegar
- Low Sodium Gluten Free Tamari
- Sesame Oil
- Maple Syrup
- Minced Garlic

Substitutions
- Capellini – If you would prefer to use rice noodles or some other type of noodle, this is an easy swap.
- Veggies – All veggies can be omitted, swapped out, or added to! If there is a different veggie you’d like to add or switch out, go for it.
- Chickpeas – Tofu would also go well in this recipe!
- Maple Syrup – You can swap this out for honey if you’re not vegan. Agave nectar would work as well.
- Minced Garlic – You can always use garlic cloves or garlic powder instead. For this recipe, you would use three diced garlic cloves or 3/4 tsp garlic powder.

Chili Garlic Noodles
Ingredients
Noodles
- 12 oz gluten free capellini
- 16 oz broccoli florets
- 4 oz shiitake mushrooms (cut into slices)
- 1 1/2 cups shredded carrots
Roasted Chickpeas
- 2 cans chickpeas
- 2 tbsp extra virgin olive oil
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Chili Garlic Sauce
- 2-3 tbsp sambal oelek
- 1 1/2 tbsp rice vinegar
- 1/4 cup low sodium gluten free tamari
- 1 tbsp sesame oil
- 2 tbsp maple syrup
- 1 1/2 tsp minced garlic
Instructions
- Preheat oven to 425℉ and grease a baking sheet with olive oil or line it with a silicone baking liner.
- Cook the capellini according to package directions.
- Drain and rinse the chickpeas. Pour them into a small mixing bowl and add the olive oil, chili powder, garlic powder, and onion powder. Stir to combine.
- Pour the chickpeas onto the baking sheet and cook in the oven for 15 minutes.
- Sauté the mushrooms and broccoli in a pan with olive oil on medium heat until browned/softened.
- Make your sauce by combining all of the chili garlic sauce ingredients in a small mixing bowl and stirring.
- Once the capellini is cooked, combine this with the broccoli, mushrooms, shredded carrots, and roasted chickpeas.
- Stir in your chili garlic sauce.
- Enjoy!
