
Ok, I know what you may be thinking – ANOTHER overnight oats recipe?!? This girl must be obsessed with them. Well, in truth, I am! I love how simple they are and the ability to make them the night before so they are ready in the morning. Not to mention, they are super filling and fiber-packed. Another bonus is there are so many flavors you can try! This particular flavor happens to be perfect for the fall season.
As with all of our recipes, these oats are plant-based, gluten free, delicious, and nutritious. I mean come on, who doesn’t love pumpkin flavored anything in the fall (If you say you don’t, you’re lying!). Give these yummy overnight oats a chance!
Are These Meal-Prep Friendly?
When I make these oats, I make them the night before and do them as a single serving. However, if you triple the recipe and store them in a larger container, you could make them for a few days in advance! So, in short, would I call them TRULY meal-prep friendly? No. Despite this, you can prep them for a few days in advance as opposed to the whole week.
I’m Sure There’s Some Crazy Equipment Needed, Right?
No way! As I said, these are so simple! All you will need is a container to store the oats in overnight (I use a glass which I cover with one of the beeswax wraps) and a regular spoon to stir them. We can dub our overnight oats as a dump breakfast because all you need to do is dump in the ingredients, stir, refrigerate and enjoy! The EASIEST breakfasts of all time.


Ingredients
- Pumpkin Purée – Just canned is fine!
- Gluten Free Rolled Oats – Make sure to buy the ones that are labeled gluten free!
- Flax Seed Meal – For your daily omegas.
- Maple Syrup
- Almond Butter
- Chia Seeds
- Nuts – The first day I made this recipe, I used slivered almonds. The next day, I used chopped walnuts. All this to say, any kind of nut that you prefer will go well in this!
- Raisins
- Dairy Free/Gluten Free Chocolate Chips – I used the Enjoy Life brand’s mini chocolate chips.
- Pumpkin Pie Spice
- Unsweetened Vanilla Almond Milk

Substitutions
- Maple Syrup – If you’re not opposed to honey, you can swap this out. You could also use agave.
- Almond Butter – If you’re not a fan of almond butter, you can swap this out for a different nut butter.
- Almond Milk – If you prefer a different kind of non-dairy milk, you can easily switch this out.
- Omissions or Additions – If you would like to omit any of the add-ins (nuts, chocolate chips, or raisins), you can take them out. If there is anything additional you would like to add, you can certainly do that as well (coconut shreds, chopped dates, raisins, etc.)

Pumpkin Bread Overnight Oats
Ingredients
- 1/4 cup pumpkin purée
- 1/2 cup gluten free rolled oats
- 1 tbsp flax seed meal
- 1 tbsp maple syrup
- 1 tbsp almond butter
- 1 tsp chia seeds
- 2 tbsp nuts
- 2 tbsp raisins
- 2 tbsp dairy free/gluten free chocolate chips (I used Enjoy Life's mini chocolate chips)
- 1/8 tsp pumpkin pie spice
- 1 cup unsweetened vanilla almond milk
Instructions
- Add all ingredients to a mason jar, glass, or bowl.
- Stir for at least 30 seconds.
- Cover and refrigerate overnight.
- Uncover in the morning and enjoy!
