Soft & Fluffy Chocolate Chip Banana Bread

Not to toot my own horn on this one, but I think I hacked the best gluten free and plant based banana bread! This banana bread is sweet, soft, and so fluffy. My husband even said he can’t tell the difference between this and regular banana bread!

Ingredients
  

Dry Ingredients

  • 1 cup brown rice flour
  • 1/2 cup tapioca flour
  • 1/2 tsp baking soda
  • 1 cup dark chocolate dairy free chocolate chips

Wet Ingredients

  • 3 ripe bananas
  • 2 tbsp flax seed meal
  • 6 tbsp water
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract
  • 1/3 cup natural peanut butter (see the note above about choosing the right kind of peanut butter for this recipe)

Instructions
 

  • Preheat oven to 350℉. Grease a large loaf pan (5” by 10”) with extra virgin olive oil.
  • In a small bowl, mix together the flax seed meal and water. Set aside for 15 minutes.
  • Mash the bananas in a small mixing bowl, add the remaining wet ingredients except for the flax/water mixture.
  • Combine all of the dry ingredients except for the chocolate chips in a medium mixing bowl. Stir.
  • Once the flax/water mixture has sat for 15 minutes, add it to the wet ingredients and mix well.
  • Pour the wet ingredients into the dry ingredients and mix.
  • Mix in the chocolate chips.
  • Let mixture sit for 10-15 minutes.
  • Add the banana bread mix to the loaf pan, spreading it out evenly.
  • Put into the oven on the top rack and cook for 45 minutes or until a knife comes out clean of batter when inserted (it’s okay if melted chocolate is on it) and bread is browned.
  • Slice into 8 pieces and enjoy warm.
